Flavor Dynamics & Food Processing

Flavor is a dynamic food property that can change during processing, storage and due to ingredient additions or modifications. FREC monitors and investigates desirable and undesirable flavor changes both instrumentally and using sensory testing.  These capabilities allow our researchers to:

  • Identify mechanistic pathways of desirable and undesirable flavor generation in foods
  • Investigate and advise industry members on off-flavor mitigation approaches
  • Provide insight into maintaining consistent product flavor after product reformulation; such as when switching to low-sodium or whole wheat formulations
