While pursuing a Chemistry degree from the University of Illinois Urbana-Champaign, Paulina worked in the synthetic organic chemistry research, only to realize that it was not her passion. She then worked as a research assistant under Dr. Elvira de Mejia in the study of food colors, in which her interest in food science research sparked. Her growing love for chemistry and working with natural food products drove her to pursue further study and research in the flavor chemistry area. After her graduate studies, Paulina plans to enter food and flavor industry. Currently, Paulina’s research involves the study of bitterness and mechanistic pathway of flavor generation in the vegetable-based protein.
In her free time, Paulina enjoys watching videos on Youtube, especially cute dog videos and unique culinary travels. She would love to have her own dog someday. Besides, she likes to explore other cities and national parks around the Unites States. There, she enjoys outdoor recreational activities like kayaking and hiking.
