Dr. Vijayakumar is from Bangalore, India where he completed his BS in Microbiology, Diploma in Biotechnology, and MS in Zoology. He received his Ph.D. from the University of Cologne, Germany, where his study focused on multi-omics analysis of chemical signals in arbuscular mycorrhizal symbiosis. After post-doctoral experience(s) at Cornell University and The Ohio State University, in mass spectrometry based analysis of proteins and enzyme functions, he joined FREC in July 2017 as Research Associate 2.
His research interests in flavoromics are to derive information from chemical signatures contributing to flavor perception by analysis of both volatile and non-volatile constituents. He works in assisting the development and determination of small molecules and metabolites in food and flavor chemistry, utilizing advanced liquid chromatography mass spectrometry (LC/MS) and gas chromatography mass spectrometry (GC/MS), and other fractionation techniques.
