Xue graduated from the Illinois Institute of Technology in 2015 with a MS in Food Safety and Technology.  Xue worked as a research assistant for the FDA, developing qualitative and quantitative ELISA test methods for the detection of food allergens in bakery and chocolate products.  She has also participated in the Microbiology Research Program led by the FDA and Nestle.  Xue joined Dr. Peterson's flavor lab with the goal of building on her knowledge of analytical methods and gaining more flavor experience to diversify her grasp of the field.

Xue has played the piano for 8 years and she is still dedicated to her practice even after relocating for school. She also enjoys running, hiking and swimming, most other outdoor activities, and has a great passion for cooking and sharing delicious food with friends.
