FREC SERVICES
The Flavor Research and Education Center (FREC) works to understand drivers of flavor perception and, ultimately, food choice. We have built a holistic analytical platform that combines our extensive expertise with modern and advanced instrumentation to investigate and address unique and challenging aspects of flavor discovery.
Our services include chemical profiling of non-volatile and volatile compounds in different food matrixes, quantification of aroma and flavor compounds, identification of off-flavors, activity-guided isolation of key bioactive compounds, characterization of flavor interactions—including the discovery of flavor modulating compounds, and sensory analysis as part of analytical projects.
UPLC/MS Platform
Our modern LC-MS platform delivers accurate analysis with high reproducibility. Our LC systems coupled with the most advanced MS detectors provide high-quality analysis, separation, and compound identification for all types of food samples.
Liquid chromatography/mass spectrometry (LC/MS): triple quadrupole, and quadrupole-time of flight (Q-ToF), mass spectrometers for quantification, and structural elucidation. High-quality sample preparation with Hamilton automated robot to increase throughput and enhancing laboratory efficiencies.

LC-Preparative Platform
Multiple prep-LC instrumentation together with customized fractionation methods enable fast and reproducible multi-dimensional liquid chromatography for the isolation and purification of taste active and flavor modulating compounds needed for identification (NMR) and quantification.

GC/MS Platform
Our center has a vast background in volatile and aroma compound analysis by GC and GC-O instrumentation. Our platform offers high selectivity, specificity, and sensitivity, even for samples with low-abundant compounds.
Gas chromatography-mass spectrometry (with and without olfactometry): single quadrupole, triple quadrupole, and quadrupole-time of flight (Q-ToF), mass spectrometers for quantification and structural elucidation.
Gerstel Rail multifunctional autosamplers and sample preparation robot for GC and GC/MS. The MultiPurpose Sampler (MPS) provides modern analytical laboratories high throughput, high performance, and unparalleled flexibility.
